Cooking Light Slow Cooker

Most of my cookbooks are strictly books of recipes. Cooking Light Slow Cooker is food porn as well. A pretty picture for each recipe. Not that I mind that much. The food is pretty damn tasty, and relatively healthy. I subscribed to Cooking Light magazine for four years and was quite happy. Would have kept the subscription but I had plenty of recipes and didn’t really need new ones every month.

When I moved into my new place, I’d left all my cookbooks and copies of recipes at my old place. Faced with a four hour round trip drive (and approximately $40 in gas to do it), I just headed over to pick up a couple of cookbooks to tide me over the first week. This was one of them.

In addition to generally being pretty easy to make, slow cooker dishes have the side benefit of smelling up my whole house with the odors of food. You can’t go wrong.

The recipes I’ve tried so far:

Beef Burgundy (p. 38)
Really really good. I think I followed the recipe to the letter.
Turkey Thighs with Olives and Dried Cherries (p. 68)
Oh my god was this good! I cut up some chicken breasts instead of using chicken thighs because I had chicken breast in the Costco mega-pack. Only issue was that the recommended cooking time resulted in slightly overcooked chicken with my Crock Pot.
Tiny French Beans with Smoked Sausage (p. 70)
Not blow me away good but a good sausage and bean recipe.
Homestyle Potato Soup (p. 98)
Decent, but I’ll still be looking for a better potato soup recipe.
Chicken Brunswick Stew (p. 110)
Holy crap this is good! Really easy recipe too. It’s a somewhat sweet chicken based stew, and it has lots of vegetables in it.
